Protein Packed Vanilla Pancakes

Ingredients

  • Olive oil spray
  • 1 cup gluten-free flour
  • 3 servings MIOCOCO Vanilla Grass-Fed Whey Protein Isolate
  • 2 tablespoons almond flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 cup almond milk
  • 2 Eggs
  • 2 tablespoons pure maple syrup
  • 2 tablespoons almond butter, slightly melted
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly coat a skillet with olive oil spray and heat over medium heat.
  2. In a large bowl, whisk together the gluten-free flour, MIOCOCO Vanilla Grass-Fed Whey Protein Isolate, almond flour, baking powder, and salt.
  3. Add the almond milk, eggs, maple syrup, melted almond butter, and vanilla extract to the dry ingredients. Whisk until smooth and fully combined.
  4. Pour the batter onto the heated skillet. Cook until bubbles form on the surface, then flip and cook until both sides are golden.
  5. Serve warm with a drizzle of maple syrup or almond butter.
