Protein Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour
  • ¼ cup coconut flour
  • ¼ cup granulated stevia
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 serving MIOCOCO Vanilla Grass-Fed Whey Protein Isolate
  • ¼ cup unsweetened applesauce
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, granulated stevia, baking soda, salt, and MIOCOCO Vanilla Grass-Fed Whey Protein Isolate.
  3. Add the applesauce, almond milk, vanilla extract, and egg. Mix until a soft dough forms.
  4. Gently fold in the chocolate chips.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet and lightly flatten with your fingers.
  6. Bake for 10–12 minutes, or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
